Menu Plan Monday 12/31/18

Hi everyone! I hope you had nice Christmas celebrations and are ready to welcome in another year. We’ve all made it through this one, and one thing we can count on is that God will be with us in 2019 as well.

We had a nice Christmas. We were able to visit with my husband’s side of the family, and a day or so later with mine as well. Lots of travel time, but the weather was mild which helps a lot. When we returned from up north, we discovered that our newest rabbit, Bear, had died 😦 So that was a sad evening. We are happy to have had him for the months that we did. He was very sweet and was one of the few rabbits we’ve had that would sit on your lap and just be cuddled.

I have begun slowly taking down decorations. I feel blessed that I have the time to do that, because I really prefer it that way — less work when it is spread out, plus it lets the “prettiness” of the season stick around a little longer.

Over New Year’s Eve and New Year’s Day, we always enjoy watching the Twilight Zone marathon on the Syfy channel. I take the time to take ornaments off the tree while watching that. And although I love the Christmas tree, it’s also nice when it is down because it stands in front of our front window. Without it, quite a bit more light comes into the room.

Saw these over the weekend in the store. I really wanted to open a box to get a look at the white and black boarders! 🙂

It is wonderful to have all three girls here last week, and this week too. We have made a list of things we would like to do this week. Here is our menu plan:

Monday: Lasagna soup – delicious!

Tuesday: I’m hoping to go to Moe’s. They usually have a great deal like $2 burritos on New Year’s Day 🙂 Hard to beat that price.

Wednesday: White Chicken Lasagna — this is similar to my recipe. When Daughter #1 was born, our pastor’s wife made this and brought it over. It is delicious, and remains a favorite around here.

Thursday: Amish Potato Casserole (oldest daughter’s favorite)

1.5 lb browned ground beef (I use 1 lb max, and it’s ground turkey around here)

1 pkg taco seasoning

1 small onion, diced

8 medium potatoes, boiled and shredded (or use a bag of hash browns)

4 T butter, melted

2 cups shredded cheese

1 t. salt

1 pint sour cream

1 can cream of mushroom soup

1 soup can milk

2.5 cups crushed corn chips

Combine ground beef, taco seasoning and onion. Put mixture in bottom of 9 x 13 dish. Mix potatoes with butter, cheese, salt, sour cream and soup. Mix with milk. Spoon over hamburger mixture. Top with remaining chips. Bake 45 minutes at 350.

Friday: Calico Beans

  1. What is the story on the beautiful iced Christmas cookies you displayed at the top of your blog today? I can tell the joy in your words about having your girls home. I am glad they bring you joy! I realize I have one food gift certificate that expires at the end of 2018 so I may have to get dressed and trudge out in the rain to get their product yet today.

  2. God bless you and your family in 2019! Your decorated Christmas cookies look so delightful at the top of your blog. The Amish potato casserole sounds easy to make and delicious. I must make a copy of that recipe for sure. Enjoy the last few days of vacation left with all 3 daughters home, and HAPPY NEW YEAR to your family!

  4. So sorry to hear about Bear. He was such a pretty rabbit and since he liked to be cuddled, I am sure you will miss him. Am glad to hear about your Christmas and am glad you had mild weather for travel. We were in the Florida Panhandle and I thought it was cold since I am acclimated to such warm weather! Glad to get back to a warmer climate where it’s sunny and in the upper 70’s and lower 80’s. The cookies at the top of your blog were so pretty. How come none of mine look like that? Your menu for the week sounds delicious. As usual, I am taking it one day at a time as for as our dinners go. I need to eat less so I can drop a few pounds. Too many goodies over the holidays!!
