Menu Plan Monday 12/3/18

This weekend has been a busy one. I know I say that a lot, but don’t get the wrong idea, because often I have quite a bit of time during my weekdays. Then, when the afternoon gets going, piano students begin arriving. And some weekends, like the one just ended, I have events as well. This past weekend was lovely. Here’s a little hint of one event — I’ll tell you more later in the week.

I thought we could all use a little beauty in our Mondays!

The week ahead looks cold and dreary here. I think the weatherman predicted about 10 days with no sun 😦 I often think winter would be much cheerier if only it wasn’t overcast and cloudy so much of the time. Is it that way where you live too?

At least we can eat warm, cozy food. Here’s the plan for the week ahead:

Monday: 20-Minute Skillet Tuscan Tortellini — made before; yum!

Tuesday: Fish and vegetables — mashed potatoes and peas maybe?

Wednesday: Wendy’s Chili — really does taste like Wendy’s, and we’ll be having lots of soups with this cold and nasty weather.

Thursday: chicken/potato/carrot bake — I cut up potatoes, carrots, and a chicken breast or two and sprinkle with about 1/3 cup olive oil and a packet of onion soup mix. Bake at 400 for about 45 minutes.

Friday: Lasagna soup — another good soup.

  1. I look forward to upcoming reports on the two special weekend reports! Today for lunch I had macaroni and cheese. Tonight it will be soup for supper. That is all I know for now, because I have luncheons to go to on Tuesday and Wednesday.

  2. I am glad you got to do some fun things in the past few days. I anxiously await your describing of where you went and what you saw. I am not sure dreary days bother me. I’m usually thinking of other things besides the weather. I did enjoy a meal at Batar on Saturday. It is such a pretty place! To me, the beauty exceeds the foods they serve.

  3. Crazy, busy here with many doctor appointments this week for mostly hubby, and the one I had just got postponed. So that opens an afternoon up for me and I hope to get some Christmas stuff done. We usually eat out after appointments. My computer has been down for 5 days and a repairman now has it up and running for me. Yeah!! Your menu sounds delicious! Not many cold, cloudy, dreary days here in central Florida. Our weather now is nearly perfect but we’ve had a couple of cooler days and, of course, we are all freezing!! You guys up north would be wearing shorts and tank tops if you were down here!!
